Sanguisorba minor

Salad Burnet is a common and traditional herb throughout Europe, where it is native to all but the coldest regions. With uses ranging from salads and sauces to beverages and cheeses, Salad Burnet has a mild cucumber flavor that lends itself well to many similar uses as fresh mint. Salad Burnet was supposedly Francis Bacon’s favorite herb and was so appreciated in Great Britain that the English colonists brought plenty of the plants with them to establish in North America.

Plants are perennial and easy to grow, being evergreen in cool winter climates. Naturally compact, Salad Burnet grows between one and two feet high and wide. If given the opportunity, plants left to flower will reseed allowing a patch of plants to form. Plants appreciate full or filtered sun, consistent soil moisture and perform best with companion plantings.

Cold hardy to zone 6b and above or to -5 degrees Fahrenheit.
