Sassafras is a medium-sized, deciduous tree native to eastern North America that is appreciated for its aromatic foliage, attractive form, and brilliant fall color. Sassafras has a rich culinary history, being a historical flavoring for rootbeer, gumbo, and a myriad of confections and candies. Today Sassafras has fallen out of favor due to health risks associated with consuming large amounts of its essential oils. Despite this, it is still a wonderful garden plant! Its glossy green leaves are uniquely variable, appearing as oval, mitten-shaped, or three-lobed on the same tree before turning vibrant shades of yellow, orange, scarlet, and deep red in autumn.
Trees grow to about forty feet high and have a rounded crown and an open habit. Sassafras prefers full or partial sun and is adaptable to many different soil types, so long as as the plant receives regular moisture.
Cold hardy to USDA zones 4a and above, or to -30 degrees Fahrenheit.
